As most of you know by now I am obsessed with food. I talk about it during my Monday 7:30pm class. Try listening to a conversation between me and Bish/Sham/Shurk..it’s a 99% of the time a food convo. Come over and check my fridge, its almost always stocked to the max.

My dad Big Lou is where the apple fell from, guy’s always sizzling something up whenever I’m back home. When I first learned to cook he said to me “Cooking is an art, baking is a science.” If you mismeasure while baking a cake it comes out terrible but getting creative and going by feel while cooking will often times yield you the most amazing results.

I never claimed to be a good cook, but I’ve learned to make something from nothing. Give me stale crackers, left over mac and cheese, and an orange and I’ll give you something you’ll appreciate. That being said the summer is extremely challenging because its often 95 and humid. It’s nice to use the grill but even eating warm food just spikes your temp and leaves you sweating for hours. So I’ve come up with some of my favorite throw together recipes that are delicious, healthy and to be eaten cold. I won’t give you exact measurements because…well try it for yourself and make something from nothing.

Chicken Salad
Pulled rotisserie chicken
Chopped red peppers, celery, craisins, grapes, apple
Dash of olive oil, honey, mustard, salt and pepper

Egg Salad
Hard boiled eggs
Red bliss potatoes
Chopped celery, peppers
Dash of olive oil, mustard, salt and pepper

Sweet Potato Salad
Baked chopped sweet potatoes
Chopped peppers, cilantro, craisins, dash of honey salt and pepper

Mango Salsa
Chopped mango, red pepper, cumin, chili powder, lime juice, cilantro

Fruit Water
Frozen ice cubes with muddled pineapple/blueberry, strawberry/raspberry, grape and apple
