Hey paleo challengers, we know breakfast can be tough, especially when you are already running behind schedule. Take a little extra time to prepare your breakfast for the week on the weekend! Try this delicious Crust-less Quiche taken from Paleo Comfort Foods.
Ingredients: 12 large eggs, 1/2 cup almond flour, 1 tsp baking powder, 1/2 cup ghee or butter melted, 1 cup of onions chopped, 1 cup spinach rinsed, 1/2 cup red bell pepper diced small, 1/2 cup green bell pepper diced small, 1/4 tsp fresh ground black pepper.
Preparation: 1. Preheat oven to 350 degrees F. 2. In a large bowl, whisk eggs together until slightly foamy. Stir in the almond flour and baking powder. 3. In a large saute pan, melt the butter, then add in the onions and spinach, cooking until onions are translucent. Mix in the peppers and any other veggies of your choosing. 4. Stir the veggie/ghee mixture into the eggs, and pour the contents into a 9×13 inch baking dish, and top with pepper. 5. Bake for 45 minutes or until cooked through. 6. Enjoy!
*Variations: You can alter this recipe by marinating some steak of your choosing and browning that in the pan to mix in with the eggs. Or, you can even mix in some sausage to the eggs, and top the frittata with some as well.
